This post might be one of my favorites because risotto is close to one of my favorite, if not my favorite, dish of all time.  Choosing the best dishes was really difficult.  There were so many great recipes submitted this week.  So please click on these other awesome offerings and I will be creating an album on FB to see these amazing ideas.  A lot of people, including me, have trepidation over making risotto.  It took me years to “get it” right.  The key is to cook on medium high heat, not low heat.  Enjoy this Friday Five – Risotto addition.

So let’s begin with a Fall idea, Roasted Butternut Squash & Saffron Risotto from Javelin Warrior’s Cook inw Luv.

Next, we move to a Roasted Corn Risotto from Amuse Your Bouche.
