Brie & Blackberries on a Crostini

This was a slight variation on the wrapped brie with fig that so many people make and it is quite good.  Roast a fruit, in this case blackberries with olive oil and salt and then top on the melted brie.  This recipe was adapted from Bakingserendipity.  Check out her other offerings, you will like them.

Recipe
Brie & Roasted Blackberries:

  1. Spread parchment paper on a baking tray and place washed and dried blackberries on the paper
  2. Drizzle with olive oil and sprinkle with salt
  3. Place in a 400 degree oven for about 30 minutes
  4. Find some nice crusty bread and slice brie pieces to put on top of the bread; melt in a 350 degree oven for 5 – 6 minutes
  5. Remove and top with the blackberries.

    Oooh…. this sounded good just with brie and blackberries… but roasted blackberries is amazing! Can’t wait to try this!
