Banana Fudge Layer Cake

Banana Fudge Layer Cake

This was the second attempt at a birthday cake for my father – a banana fudge layer cake.  As I wrote in my prior post (also a banana cake), we had to postpone the party because my dad was having some health issues.  Those issues seem to be in check as much as they can be.  So this cake was prepared for the rain date.  Well, we live in Chicago and it has been an awesome winter.  For those of you that know, that means tons of snow and tons of cold. We have had more of each piece of weather than we have experienced in three decades.  The point is, the 2nd birthday party was postponed because of weather.  So if my dad sees this post, he will know what he missed.

What makes this banana fudge layer cake so cool is the addition of a layer of cinnamon fudge in the middle.  I think it looks cool and the cinnamon chocolate is such a great compliment to the bananas and the cream cheese.

INGREDIENTS

CAKE

  • 1/2 lb. (2 sticks) sweet butter
  • 1 cup granulated sugar
  • 2 eggs
  • 3 mashed overripe bananas
  • 1 3/4 cup unbleached all-purpose flour
  • 1/2 tsp salt
  • 2/3 tsp baking soda
  • 5 tbsp buttermilk
  • 1 tsp vanilla extract
  • Cream Cheese Frosting (recipe below)

CREAM CHEESE FROSTING

  • 8 oz. cream cheese, at room temperature
  • 6 tbsp sweet butter, at room temperature
  • 3 cups confectioners’ sugar
  • 1 tsp vanilla extract
  • juice of 1/2 lemon (optional)

CINNAMON CHOCOLATE

• 14 ounces sweetened condensed milk

• 2 teaspoons ground cinnamon

• 1 teaspoon vanilla

• 2 cups bittersweet chocolate

• 3 tablespoons unsalted butter at room temperature

 

 

Directions:

CREAM CHEESE FROSTING

Cream together cream cheese and butter in a mixing bowl.  Slowly sift in confectioners’ sugar and continue beating until fully incorporated.  Mixture should be free of lumps.  Stir in vanilla and lemon juice.  My mixture was too runny.  So I kept adding more confectioners sugar a couple of tbsp at a time until I had the desired consistency.

Line a 13 x 9 inch with parchment paper.

Melt the chocolate and butter in a sauce pan.  Mix into the other fudge ingredients in a stand mixer.  Pour the fudge into a thin layer on the bottom of the pan.

Place in the fridge so it will set.

Meanwhile, preheat the oven to 350°.  Use cooking spray on 13 x 9-inch cake pan.  In a stand mixer, cream butter and sugar together until light and fluffy 3 – 4 minutes.  Add eggs, one at a time, beating well after each addition. Mash banana in bowl.  Then, add mashed bananas to the mixing bowl and mix thoroughly.  Sift dry ingredients and add to butter and egg mixture.  Add it 1/3 at a time.  Finally, mix until the flour has been fully incorporated.

Add the buttermilk and the vanilla.  Mix for 1 minute.  Pour batter into the prepared pan.

Set on the middle rack of the oven and bake 23 to 25 minutes or until a toothpick inserted into the center comes out clean.  Cool in the pan on a rack for 2 hours.

Grab the fudge and peel it off the parchment paper.  Place it on top of the banana cake.

Finish by frosting the fudge topped cake with the Cream Cheese Frosting.

    I actually saw this recipe a few days ago and it popped back into my head again when I noticed I have a growing abundance of bananas in my freezer but a drought of banana recipes.
