Smoked Salmon Crostini

I think one of the challenges that we food bloggers have is that our passion for cooking pushes us to want to learn and cook most of our meals from scratch.  I know that is a problem for me.  The more I learn the “hows” of cooking, the more comfortable I get in the kitchen.  In turn, I want to make dishes that I made everything from scratch.  Given that I work full time, this goal is not always, or should I say, mostly unobtainable.  This Smoked Salmon Crostini was so tasty and I am embarrassed with how little I did to make this dish.

On my visit to the store, I saw that they had smoked salmon.  This was not the thin sliced salmon you see at the deli.  This was a piece of salmon that was cooked in a smoker.  I love all things smoked and wanted to try this smoked salmon.  Next, I figured that this would be perfect for an appetizer.  So just like the sliced salmon/nova, I paired it with cream cheese, dill and served it on crostinis and crackers.

That’s it.  This appetizer was ready in maybe three minutes.  The only thing that took anytime was having the cream cheese soften a little to make the spreading easier.  Preparing this dish was so painstaking.  Can you hear the sarcasm?  I broke the fish apart with my hands.  I sliced the bread. Then, the assembly was spread cream cheese on the bread or crackers; top with the salmon and finish with a drizzle of dill.  Yum!  Even though I am mocking the simplicity of this appetizer, it is tasty and elegant.

Ingredients
  1. 1/4 Smoked Salmon (smoked the whole fish)
  2. 6 ounces cream cheese
  3. 1 crostini loaf (or crackers if you prefer)
  4. Dill for garnish
Instructions
  1. Break the fish in your hands.
  2. Cut the crostini into 1/4 - 1/2" slices
  3. Top the crostini with a smear of cream cheese.
  4. Top with a little of the smoked fish.
  5. Drizzle the dill over smoked salmon crostini.
  6. Serve and enjoy!
