How to make Pesto

My daughter is sitting next to me and I just told her she was going to make it into the blog again.  I told her the post was about how to make pesto.  I made this recipe while you were not home.  Do not be mad at me.  She said “has it been that long since she made this recipe?  Meaning, she makes the pesto in this house.  The reality is I made this pesto recipe while she was at college.  I have never really liked pesto much and she loves it.  Not sure why I didn’t like it that much.  The basil combined with the olive oil and cheese, just doesn’t do too much for me.  (I don’t do nuts because my dad is allergic to nuts and I never learned to like them). My opinion towards pesto is changing now.  So I thought I would try it and see what I now think.

Basil pesto is quite versatile in the different ways it can be used.  I used it on an appetizer for this recipe.  My daughter loves basil pesto on pasta or chicken.  In a later post, you will see it used for a caprese appetizer.

Basil pesto - fresh herbs and olive oil make this a fresh blend to use in so many ways.

Ingredients
  1. 1 1/2 cups basil
  2. 4 -5 garlic cloves
  3. 1/4 cup grated parmesan cheese
  4. 1/8 cup lemon juice
  5. 1/8 cup olive oil
Instructions
  1. Mix everything together in food processor except the oil and lemon.
  2. Once everything is mixed well, drizzle with lemon and oil.
  3. Mix until well blended.

    I learned to make pesto a few years ago and that’s when I learned to love it. Cashews is the nut (albeit I understand it really isn’t a nut) of choice. I would like this version too. You presented it beautifully by the way. Pesto is so versatile from making a quick pasta dish to having goo in a sandwich. Plus it freezes well.

      I see it made most often with pine nuts. I really like your idea of adding it to a sandwich. I will definitely try freezing it.

    I have always wanted to make my own pesto. Now that I know how easy it is, I really have no excuse. This looks amazing!

    Where are the ingredients ? Sometimes you post them, and sometimes you don’t ?
    In case of Basil Pest — no ingredients list ??

      Mira, it is in the recipe card right in the middle. I started using the recipe card in the last month or so to make it easier to view and print the recipes. I hope this helps.
