Begin by charring the sausages in a Dutch oven. A couple minutes on each side to get some char marks. Remove from the Dutch oven and set aside.
Next, add the oil and once warm, add in the green peppers, onions and spices. Cook for 10 minutes and remove from pan.
Add the sausages back into the Dutch oven with the beer and simmer for 15 - 20 minutes.
Assemble the sandwich by placing the sausage in the bun with as many green peppers and onions as you like.
