These Poor Mans Burnt Ends take only a few hours by using a pot roast. When you use a brisket, it will take anywhere from 10 – 16 hours to create burnt ends. While the texture is a little different, the flavor is there. The pot roast is a softer cut of meat so the end product is less firm than brisket. with that said, the pot roast absorbs the smoke really well and picks up the BBQ sauce well.

The request for this dinner came from my wife. She absolutely loves burnt ends. Interestingly, the only other red meat she eats is a steak. Our first exposure to burnt ends is at our friends Mark and Susie. Susie is a phenomenal cook and has blogged in the past. Susie actually got me started. Mark is the grill man. He has a big sized wood pellet TRAEGER in his backyard. He has a recipe down for burnt ends. Whatever the spice and sauce he uses, the burnt ends are the hit of the meal and there is never any left.

I love my smokers and have made many different recipes using them. Some of may favorites include the following including making a shredded beef sandwich using pot roast.

Poor Mans Burnt Ends

The name Poor Mans Burnt Ends may sound apologetic but the flavor and end result is easy to create and so satisfying.

Cook Time 3 hours 45 minutes
Resting Time 10 minutes
Total Time 3 hours 57 minutes

Ingredients

  • 8 Lbs Pot Roast
  • 3 Tbsp Lawry's season salt
  • 2 Tbsp Ground Black Pepper
  • 1/2 Cup BBQ sauce

Instructions

  1. Begin by spicing the pot roast liberally on both sides. Be sure to take the pot roast out of the fridge for up to an hour before cooking. Add the pot roast to a pellet smoker on 275 degrees. Cook for approximately 3 hours. Using a thermometer check for doneness.

    Take off the smoker and cut in cubes. You can add a little more of the seasoned salt if you wish. Add the meat to a tinfoil container. Add in the BBQ sauce and mix well. Return the sauced meat to the smoker and cook for another 45 minutes.

    Remove from the smoker and let rest.

    Serve and enjoy!
