Finding more ways to make Paneer for my wife makes a happy life. This paneer Curry is flavorful, warming, spicy and vegan.
Cook the rice in your rice steamer.
Heat the ghee in a Dutch oven on medium high heat. Add the turmeric and the chili powder and cook for one minute. Add the onions, tomatoes, garlic and minced ginger and garlic. Cook for 5 minutes until softened. Next, add the vegetable stock and cook for another 5 minutes. Using an immersion blender, blend the ingredients until smooth. Cook for another 5 minutes, and then, add the paneer.
Serve over white rice. Enjoy!
