Begin by peeling the potatoes and boiling in water until fork tender. Add to a stand mixer and blend. Add in the cream cheese, most of the smoked gouda coconut milk and butter and blend until mixed.
Assemble the shepherds pie by adding the smoked brisket to a baking dish. Next, add the grilled corn. Next, top with the mashed potatoes and the remaining cheese. Cook in a 325 degree oven for 25 minutes.
