Tricked up Chicken Salad

The only goal for this recipe was my wife’s request for me to make chicken salad.  I wanted to add flavor and color to the traditional recipes.  To that end, I added sweet red peppers and sweet and spicy mustard to the mix.

Recipe
Chicken Salad:
  1. Poach Chicken for 30 minutes; let cool and dice up
  2. Dice 3 stalks of celery, 1/2 a red pepper and 2 green onions
  3. Add 1/2 cup of mayonnaise, 1/2 cup of spicy mustard and 2 tbsp lemon juice
  4. Add 1 tbsp paprika, 1 tsp each of salt and pepper and mix completely and serve
