Stuffed Chicken Fajitas from Feed Your Soul Too

Stuffed Chicken Fajitas is just such an example.  I am not sure where I saw this idea but it seems so obvious.  So many of us so enjoy chicken fajitas.  So how about putting the peppers and onions on the inside.  You say that is not enough.  How about we add nice melty cheese.  This recipe is so easy to put together and you will so enjoy it.

Stuffed Chicken Fajitas

I searched my blog to find recipes that I had stuffed into the main ingredient of the entree.  I was surprised to find as many recipes as I did.  I totally loved this DOUBLE CHEESE STUFFED SMOKED MEATLOAF.  Smoke goes so well with cheese.  I had so much fun with the JALAPENO POPPER STUFFED MEATBALLS.  And this cool Mexican Italian fusion recipe of MEXICAN RISOTTO STUFFED CHICKEN MILANESE.  OK.  One more idea.  Another Mexican Italian fusion recipe of MEXICAN STUFFED MEATBALLS.

I said the recipe was easy to put together.  It does have a couple of steps.  The one step that I added to this recipe was to brine the chicken.  I have only brined my holiday turkey in the past.  BRINING is the process of prepping the chicken to make the chicken as moist as possible.  I prepped the peppers and onions with plenty of spices first in a sauté pan.  I pre-baked the chicken about two-thirds of the way through.  The dish assembly was finished by stuffing the chicken with the peppers and onions and the mozzarella cheese.

Stuffed Chicken Fajitas

Try turning your recipes inside out. LITERALLY. These Stuffed Chicken Fajitas do just that creating a spicy, warming and cheesy recipe.

Ingredients

  • 9 Whole Chicken breasts cut with a pocket
  • 9 Slices Mozzarella
  • 8 Quarts Water
  • 1/2 Cup Sugar
  • 1 Whole Red Pepper sliced
  • 1 Whole Green Pepper sliced
  • 1 Whole Yellow onion
  • 1 1/2 Tbsp Ancho Chili powder
  • 3 Tbsp Adobo seasoning divided
  • 2 Tbsp Lemon pepper divided
  • 1 Tbsp Olive oil

Instructions

  1. Begin by spicing the sliced chicken with 2 tbsp adobo seasoning, 1 1/2 tbsp of the lemon pepper and place in a 325 degree oven for 15 minutes.  Remove from oven.

    At the same time, heat the oil in a Dutch oven on medium high heat.  Add the peppers and onions and cook until softened - about 10 minutes.  Remove from heat.

    Assemble the stuffed chicken fajitas by placing the chicken in a broiling tray seem side up.  Stuff each breast with a piece of cheese and stuff with as much of the pepper and onions as will fit.  Add back to the oven and cook for another 20 - 30 minutes.

    Serve and enjoy!
