Savory Albóndigas Meatballs with Spanish Rice

Ingredients

Tomato Sauce

  • 8 Whole Roma tomatoes
  • 2 Whole Yellow onions diced
  • 2 Whole Bay leaves
  • 3 Cloves Garlic
  • 3 Dried Guajillo chilies
  • 4 Whole Chipotles in adobo sauce
  • 1/4 Bunch Parsley rough chop
  • 2 Tsp Smoked Chipotle Pepper
  • 2 Tsp Coriander
  • 1 Tbsp Chili Lime powder
  • 2 Tsp Cumin
  • 2 Tsp Salt
  • 2 Tsp Ground black pepper
  • 2 Tbsp Chicken Better than Boullion
  • 1 1/2 Cups Water

Meatball Ingredients

  • 4 Lbs Lean Ground turkey
  • 1 Whole Yellow onion diced
  • 1 Whole Egg
  • 2 Whole Chipotles in adobo
  • 4 Ounces Gluten free bread ground
  • 2 Cloves Garlic minced
  • 1/4 Cup Parmesan cheese grated
  • 1/4 Cup Coconut cream almond milk
  • 1/4 Bunch Chopped parsley
  • 1 Tbsp Ground chili powder
  • 2 Tsp Chipotle ground pepper
  • 2 Tsp Salt
  • 2 Tsp Ground black pepper
  • 2 Tsp Ground cumin
  • 2 Tsp Chili lime powder

Instructions

Tomato Sauce

  1. Begin by adding the tomatoes and onions to a cast iron skillet. Char well and let cool. At the same time. Boil some water and pour over the dried chilies. Let steep for 5 – 10 minutes. You just want them to soften.

    Add all the ingredients to a blender and blend until full mixed. I like it a little chunky so I stopped before the sauce was silky smooth. Add into a pot and let simmer for 15 minutes. To finish, add in the parsley and set aside.

Meatballs

  1. Caramalize the onions in a skillet until lightly browned. Let cool and set aside.

    Add all the ingredients to a mixing bowl. Mix thoroughly. Using either an ice cream scooper or your hands, roll the ground turkey into palm size balls.

Finishing the Albondigas Meatballs

  1. Bring the tomato sauce back to a roiling simmer. Add in the meatballs, cover and let simmer for 30 minutes.

    To complete the dish, serve over Spanish rice with cumin spiced hominy, roasted bell peppers, avocados and topped with a avocado crema. Enjoy!
