Salad with Balsamic Marinated Peppers

Salads are no longer just a throw in as a side.  I used pepper in 2 ways in this salad.  I marinated red, yellow and orange peppers in balsamic for 2 – 3 hours.  I also added sliced peppers for taste and color.  The salad dressing was a mustard vinaigrette.

Recipe
Balsamic peppers:

  1. Dice 1/4 each red, yellow and orange peppers and put in a marinate bowl with 1/4 balsamic vinegar for 2 – 3 hours
Mustard Vinaigrette Recipe:
  1. 1 tbsp dijon mustard
  2. 2 tbsp balsamic vinegar
  3. 1 garlic clove minced
  4. 1 tsp oregano, salt and pepper to taste
  5. drizzle in 6 tbsp olive oil

Salad:

  1. Chop 1 bunch of red leaf lettuce and 1/2 a bunch of romaine lettuce
  2. Dice 1/8 of a red onion
  3. Dice 1 1/2 vine ripe tomatoes
  4. Add in the marinated peppers
  5. Top with sliced peppers  

Add dressing when ready to serve

    Very nice salad, colorful and healthy. I like your mustard vinaigrette too, it all sounds tasty.
