Salads are no longer just a throw in as a side. Â I used pepper in 2 ways in this salad. Â I marinated red, yellow and orange peppers in balsamic for 2 – 3 hours. Â I also added sliced peppers for taste and color. Â The salad dressing was a mustard vinaigrette.
Recipe
Balsamic peppers:
- Dice 1/4 each red, yellow and orange peppers and put in a marinate bowl with 1/4 balsamic vinegar for 2 – 3 hours
Mustard Vinaigrette Recipe:
- 1 tbsp dijon mustard
- 2 tbsp balsamic vinegar
- 1 garlic clove minced
- 1 tsp oregano, salt and pepper to taste
- drizzle in 6 tbsp olive oil
Salad:
- Chop 1 bunch of red leaf lettuce and 1/2 a bunch of romaine lettuce
- Dice 1/8 of a red onion
- Dice 1 1/2 vine ripe tomatoes
- Add in the marinated peppers
- Top with sliced peppers Â
Add dressing when ready to serve
