Chocolate and Cream cheese might be one of the best combinations ever! Now that is a strong statement.
But let me digress. I am sitting on a plane returning from a family trip to New Orleans. There is nothing better than traveling with your kids. Certainly when they are grown up. Traveling is the absolute best way to get focused time with your kids. We are together twenty-four seven. And we still like each other. Truly, it is a great experience. As a family, we are really compatible, and generally like the same things.
Of course, one of the big things my family enjoys is eating. Well of course. What did you expect? We just hit WILLIE MAE’S on the way to the airport. OMG! One of the top two fried chicken dinners ever. The other one that measures up is ZENDERS AT FRANKENMUTH. The other memorable meals or experiences are beignets at CAFÉ DU MONDE and the smoked duck at CLANCY’S shared with wonderful friends.
Tomorrow is Christmas, and if only I had posted this recipe earlier. This Lightened Up GF Chocolate Cake Cream Cheese Frosting would be a perfect holiday dessert. The cake is so moist. I challenge anyone to guess that it was gluten free. Cream cheese frosting is one of my favorites. It is so rich and the perfect complement to chocolate. I made this cake with only two layers which makes it quite easy to assemble. I made a very similar CAKE earlier this year. A typical cake recipe perfectly fills two cake pans. Same observation on a typical frosting recipe. Fits perfect if you have only one filling layer.

Lightened Up GF Chocolate Cake Cream Cheese Frosting
Ingredients
Cake Ingredients
- 3 Cups One to One GF Baking Flour
- 2 Cups White Sugar
- 1/3 Cup Cocoa Powder
- 2 1/4 Tsp Baking Powder
- 1 1/2 Tsp Baking Soda
- 1 1/2 Tsp Xanthum Gum
- 1 1/2 Cups Mayonnaise
- 1 1/2 Cups Hot Water
- 1 1/2 Tsp Vanilla Extract
Cream Cheese Frosting
- 3 Cups Confectioners Sugar
- 4 Tbsp Coconut Milk
- 6 - 8 Tbsp Butter softenend
- 8 Ounces Cream cheese softened
Instructions

Begin by combining the dry ingredients in a stand mixer. Add in the mayonnaise and mix well. Finish by adding in the hot water slowly. Once fully combined, add to 2 cake pans sprayed with coconut oil. Bake in a 325 degree oven for 12 - 14 minutes. The cake is done when a toothpick stuck in the center comes out clean. Remove from oven and let cool.
Cream Cheese Frosting

Beat the cream cheese and butter until fluffy in a stand mixer. Add the confectioner sugar one cup at a time. Mix until combined, and then, add one tbsp of the coconut milk.
Continue by adding one cup of the sugar and one tbsp of the coconut milk. After all the sugar is added, check the consistency to see if you need the last tbsp of milk or need more sugar.
Finishing Cake

Take one layer of the cake and using an offset spatula and cover the top. Next, add the 2nd cake layer and spread the remaining from on top and down the sides.
Serve and enjoy!
