There is so much depth to this Chicken Stew with GF Cheddar Biscuits. The best thing is this is a one pot meal.

I love one pot meals. I like the simplicity of the cleaning but what I really like is the throwing everything into one pot. Recipes are so much better when the flavors are layered in and that has to happen when you make a one pot meal. Some great examples of one pot meals include:
Surprisingly, this is a one pot meal even with biscuits. The meal is cooked in two phases. The base of the veggies and then the biscuits. I guess I am stretching the definition because I smoked the chicken. The chicken could have been easily cooked in the pot prior to all the other components to make this a true one pot meal.

One pot meals combine both flavor with simplicity. My Chicken Stew with GF Cheddar Biscuits is tasty and cool that the biscuits were made in the same pot.
Ingredients
GF Cheddar Biscuits
- 2 Cups GF Flour
- 1 Tsp Xanthan gum
- 1 Tbsp Baking powder
- 1 Tbsp Sugar
- 3/4 Tsp Sea salt
- 1/2 Tsp Baking soda
- 1/2 Tsp Old Bay seasoning
- 6 Tbsp Shredded butter super cold
- 1 Cup Sharp Cheddar cheese shredded
- 1 Tsp Garlic
- 1 Cup Milk
- 1 Tbsp Dried parsley
Smoked Chicken
- 8 Whole Chicken thighs
- 2 Tsp Salt
- 2 Tsp Black pepper
- 1 Tbsp "Bullshit" chicken spice
Chicken Stew
- 2 Whole Medium yellow onions diced
- 3 Stalks Celery diced
- 26 Whole Baby carrots diced
- 2 Whole Red peppers cut in slices
- 3 Tbsp GF flour
- 3 Tbsp Butter
- 6 Cups Chicken stock
- 1 Tbsp Olive oil
- 2 Tsp Salt
- 2 Tsp Black pepper
- 2 Tsp Smoked paprika
Instructions
GF Cheddar Biscuits

Begin by shredding the butter using a cheese shredder. Once shredded, add to a freezer and let chill for up to 15 minutes. Next, mix all the dry ingredients. Cut in the shredded butter. Once the flour has absorbed the butter (do not overmix), add in the cheese and milk. Mix to combine and again do not overmix. Form into biscuit shapes. Place in a fridge while the rest of the dish is prepared.
Smoked Chicken

Spice the chicken. Add to a smoker and cook for 2 hours at 225 – 250 degrees. Once cool, shred the chicken and set aside.
Chicken Stew

Begin by heating the oil on medium high heat in a Dutch oven. Add the onions, carrots and celery and cook for 5 minutes. Next, add the spices and the red peppers. Stir well and cook for 1 minute. Add the butter and cook until it melts. Next, add the flour in mix until well combined. Cook for 2 minutes to cook out some of the gf flour flavor. Now, add the chicken stock. Bring to a boil, and then, reduce to a simmer. Cook for 5 minutes until the sauce starts to thicken. Add in the chicken and simmer for 2 more minutes. Top with the prepared gf cheddar biscuits. Place in a 325 degree oven uncovered and cook for 20 minutes.
