Braised Yellow Tail

I would say this is one of the posts that is pretty basic but it shows me how far my cooking has come.  I never heard of braising fish.  I had to braise the fish because I bought it the week before and we ended up freezing it.  I took it out of the freezer and put it in the fridge.  When I got home and took it out of the fridge, it was not thawed.  What to do?  The only way I could think to cook the fish without waiting all night was to braise it.  I have only braised cheap cuts of meat and understood how that would make the meat tender.  But braising a fish.  What will happen?  The result was phenomenal – you have to try making this Braised Yellow Tail.

Ingredients:

  • 2 Yellow Tail fillets
  • salt & pepper to taste
  • 1 cup of vegetable broth
  • 2 tbsp fish sauce

Directions:

I have to share that I am writing this post probably 2 weeks after I made the dish and I cannot fully remember all the details I put into the recipe.  I can’t remember if I added more spices or added other liquid to the fish.  So this is half a recipe.  I am still sharing it because the recipe is about the cooking method more than the spices.  I always spice the fish before cooking.  Since the fish was not thawed, I did not sear it first.  I put the liquid in first and reduced it a little.  Then, I put the fish in.  I cooked the fish on low heat so it could soak up the flavors while it thawed out.  Now it was not frozen but it was not totally ready for cooking.  The fish was done when I touched it and it was firm but I could press on it and it bounced back.
