Do you ever get a giveaway or a gift of food? When do you use it?
I had this blue corn pancake mix in my pantry and I had kind of forgotten about it. Because the flour mix is made of blue corn, the pancakes are heavier than traditional pancake mixes. They are also gluten free. To balance the earthier nature of the blue corn I topped it with a strawberry sauce. Not just any strawberry sauce but a sauce infused with red chili flakes.

These blue corn pancakes with spicy strawberry sauce are totally different and work quite well for a brunch. The pancakes fluff up really well. They are very hearty. They are light on the inside but firmer overall. What I think is interesting is the pancake have a blue tint to them. I guess that makes sense. You can see the blue specs in the pancake mix. You have to look at the pancakes from the side, and then, you can see the blue hue.
The fancy part of this recipe is the spicy strawberry sauce. There are 4 ingredients to make this sauce. It could not be easier. The sauce begins by adding sugar, the red pepper flakes and lemon juice to a sauce pan. These ingredients are cooked until the sugar is dissolved. Then, the strawberries are added and cooked down releasing some of their liquid.

A unique brunch idea with these earthy Blue Corn Pancakes. The brunch idea is dressed and spiced up with a spicy strawberry sauce.
Ingredients
Strawberry Sauce
- 1 Pint Strawberries quartered
- 1/4 Cup Sugar
- 2 Tsp Red Pepper Flakes
- 1 Whole Lemon juice squeezed
Blue Corn Pancakes
- 2 Cups Blue Corn Flour
- 1 Cup Water
Instructions
Strawberry Sauce

In a sauce pan, add the sugar, red pepper flakes and lemon juice. Mix well and cook until the sugar is dissolved. Add the strawberries and cook until softened stirring frequently - roughly 10 minutes. Remove from heat and set aside.
Blue Corn Pancakes

Combine the blue corn flour and the water and mix well. Spray the skillet and turn on medium high heat. Once hot, pour 4 - 5" pancakes. Once the bubbles pop on the top of the pancake, flip the pancake and finish cooking. It will be about 3 minutes per side. Finish cooking all the pancakes.
To serve, plate the pancakes and top with as much strawberry sauce as you like.
