BBQ Smoked Chicken Sandwich

There is nothing like smokey flavors.  The smoked chicken is the base of this sandwich but so much is added through the mixing of other flavors.  Probably the most significant is the BBQ sauce.  I experiment with lots of different sauces.  The base of this sauce was Jack Daniels and Ketchup.

 Recipe
BBQ Chicken Sandwich:

  1. Put a dry rub on the chicken for at least 20 minutes and up to a day – liberally apply smoked paprika, dust with ancho chili powder and salt and pepper lightly
  2. Put on smoker at 225 degrees for 2 & 1/2 hours
  3. Let cool, and then pull
  4. While the chicken is cooking, begin your BBQ sauce.  Combine
    • 1 cup Jack Daniel’s Whiskey
    • 4 cups ketchup
    • 1 smoked yellow onion
    • 1/2 cup dark brown sugar
    • 1/4 cup vinegar
    • 1 tablespoon lemon juice
    • 2 teaspoons Worcestershire sauce
    • 3 cloves garlic, minced
    • 1/2 teaspoon dry mustard
    • salt and pepper to taste
  5. Bring to a boil and reduce to a simmer.
  6. Add pulled chicken to pot and let simmer for an hour and serve
