  • 12 Whole Baking Potatoes
  • 1 Bunch Green onions diced
  • 4 Cloves Garlic sliced
  • 2 Whole Eggs beaten
  • 1 Cup Coconut milk
  • 1 Tbsp Turmeric
  • 2 Tsp Ground Black Pepper
  • 2 Tsp Kosher salt
  • 2 Tbsp Olive oil divided
  • 3/4 Cup Sharp Cheddar Cheese
  • 1/4 Cup Shredded Parmesan cheese
  • 1 Tbsp Lemon juice


  1. Begin by cooking the potatoes in boiling water. Cook until just done. Let cool enough to be able to peel off the skins.

    Next, heat 1 tbsp of the oil in a skillet. Add the green onions and garlic and sauté for 3 minutes. Set aside. Now, combine the eggs, coconut milk, lemon juice, spices and then the most of the cheeses. Mix well. Add the potatoes to the liquid and mash with a masher. Once combined, fold in the green onions and garlic.

    Place into the same skillet used for the green onions and garlic and add the remaining oil. Heat for 2 minutes until simmering. Pour in the potato mixture and top with the remaining cheese. Place in a 375 degree oven and bake for 35 - 45 minutes. You want to get a good crust on the bottom and the edges of the potatoes.
