Mix all the spices and apply to the chicken breasts. Heat the oil in a Dutch oven. Once the oil is shimmering, add the chicken breasts and cook approximately 3 minutes per side.
Next, add the stock and cover the pot. Simmer for 15 - 20 minutes. Add the preserve and the peaches and simmer for 5 more minutes. Using a spoon, ladle the preserve stock over the chicken.
Serve over rice with plenty of the sauce. Enjoy!
