Butter Bean Kale Stew

A key cooking tip is to carry through a spice to different parts of your meal. In this Butter Bean Kale Stew I used adobo seasoning and ancho chili powder.

  • 1 Can Whole Tomatoes
  • 1 Can Diced tomatoes with green chilies
  • 2 Cans Butter Beans
  • 1/2 Whole Medium yellow onion diced
  • 1/4 Head Kale
  • 1 Whole Jalapeno diced
  • 1 Tbsp Adobo seasoning
  • 2 Tsp Ancho chili powder
  • 1 Tsp chili powder
  • 1 Tsp Oregano
  • 1 Tsp Spanish paprika
  • 1 Tsp Black pepper
  • 1 Tbsp Olive oil


  1. Heat the oil on medium heat in a cast iron skillet. One warm, add the onions and spices. Cook for 3 - 4 minutes. Next, add the butter beans, jalapenos and each of the tomatoes. Mix well and cook for 5 - 7 minutes. Add the kale, mix a couple of times and cook until wilted - 3 - 5 minutes. Taste for seasoning.
