Salsa Topped Tilapia

A super tasty seafood dish that comes together so quickly and takes advantage of leftover cilantro, onions and tomatoes and simply bakes in the oven.

Ingredients

  • 3 Fillets 6 Ounce Tilapia fillets
  • 1 quart Tomatoes diced
  • 3 Whole White Onions diced
  • 2 Bunches Fresh Cilantro
  • 1 1/2 Tbsp Adodo Seasoning
  • 1 Tbsp Olive Oil

Instructions

  1. Begin heating the oil in a pot.  Add the onions and cilantro.  Cook down for 5 minutes or so.  Add in all the tomatoes and cook down on medium heat for 25 - 30 minutes.

    Place the tilapia on a baking tray.  Top with the adobo seasoning.  Then, top with as much salsa as you can fit on the fillet.  Bake in a 325 degree oven for 6 - 8 minutes.

    Serve and enjoy!
