Continuing on my wife's birthday dinner with this super awesome, totally repeatable appetizer - Spanish Marinated Artichoke Appetizer.
Add olive oil and vegan non-dairy spread into a skillet and turn heat to medium. Add the garlic and cook stirring often for 2 minutes. Stop cooking if the garlic is browning and immediately add the tomatoes. Cook for 2 minutes. Stir frequently.
Add wine and reduce for 2 minutes. Add the artichoke hearts and cook for 5 minutes.
Add the salt and pepper.
Serve and enjoy!
