Spanish Marinated Artichoke Appetizer

Continuing on my wife's birthday dinner with this super awesome, totally repeatable appetizer - Spanish Marinated Artichoke Appetizer.

Ingredients

  • 1/2 Cup Extra Virgin Olive Oil
  • 2 Tbsp Earth Balance
  • 1 Head Garlic rough chop
  • 10 Whole Cherry Tomatoes cut in half horizontally
  • 2 Tbsp White Wine
  • 2 Cans Artichoke Hearts rough chop
  • 2 Tsp Black Pepper
  • 2 Tsp Salt

Instructions

  1. Add olive oil and vegan non-dairy spread into a skillet and turn heat to medium.  Add the garlic and cook stirring often for 2 minutes. Stop cooking if the garlic is browning and immediately add the tomatoes.  Cook for 2 minutes.  Stir frequently.

    Add wine and reduce for 2 minutes.  Add the artichoke hearts and cook for 5 minutes.

    Add the salt and pepper.

    Serve and enjoy!
