Julia Childs Roast Chicken

Following a classic recipe from Julia Childs to recreate her Julia Childs Roast Chicken. The primary trick is to saute veggies and add them to the cavity.

Ingredients

  • 1 Whole Chicken
  • 3 Stalks Celery rough chop
  • 2 Whole Carrots rough chop
  • 1 Whole Yellow Onion diced
  • 1 Whole Lemon Cut in half
  • 1 Bunch Fresh Thyme
  • 1 Tbsp Oregano
  • 4 Tsp Salt divided
  • 4 Tsp Black Pepper divided
  • 1 1/2 Tbsp Olive Oil divided
  • 3 Tbsp Butter softened

Instructions

  1. Heat the oil in a skillet on medium heat.  Add the vegetable and half the spices and cook until softened - about 5 minutes.  Remove from stove and let cool.

    Add the the veggies in the cavity of the chicken with the cut lemon.  Rub the softened butter on the skin of the chicken.  Sprinkle the remaining spices on the exterior of the chicken.

    Place in a 350 degree oven and cook for 90 minutes checking for doneness.


    Serve and enjoy!
