I think there are certain ethnic items that you assume are hard to make and then you learn, they are really easy. Â This traditional Greek sauce is such a staple. Â I was creating a Gyros using lamb sausages (see earlier post) and this was the necessary ingredient to pull off the concept.
Recipe
Tzatziki Sauce:
- 1st thing you need to do is to dice up a cucumber and mix with 1 tbsp of salt and place in a sieve to remove the a lot of the moisture (let drain for at least 1 hour)
- Add the drained cucumber to 1 pint of plain Greek  yogurt; mix in the juice from 1 fresh squeezed lemon, 2 tbsp olive oil, 4 minced garlic cloves, 1 1/2 tsp of chopped dill, 1/2 tsp each of salt and pepper and mix well
- Refrigerate for a few hours (I let the flavors come together for more than 4 hours) mix and serve.

i love tzatziki, great recipe. I have never salted my cucumbers to get some of the moisture out, next time I make this I will try it!
