Tomato Vodka Cream Sauce

I had planned on my daughter having a vegetarian friend over for dinner.  Plans changed but I was in that mind set.  So I switched from Ratatouille to a pasta in a tomato vodka cream (fat free 1/2 & 1/2) sauce.

Recipe
Vodka Tomato Cream Sauce:

  1. Dice up 2 yellow onions and 2 cloves of garlic and put in a saute pan with 2 tbsp of olive oil on medium heat until softened; salt and pepper to taste
  2. Add 1/4 cup of vodka and raise heat to medium high and burn most of the liquid and then add 1 can of whole tomatoes in basil sauce and cook for 25 minutes; take an immersion blender and blend to desired consistency
  3. Add 1 cup of fat free 1/2 & 1/2 and cook for 2 minutes and serve
