I used the Tilapia that was braised in Mexican spices for the fish. Â I added some grilled corn salsa, some sriracha mayonnaise and a pretty decent version of Chipotles cilantro rice. Â All the flavors worked so well together.
Recipe
Tilapia Fish Tacos:
Mexican marinated and spiced Tilapia (see post)
Chipotle Rice:
- I actually worked with white rice that I had already made – probably 3 cups full
- I put 2 tbsp olive oil in a pan over medium heat and added the rice
- Add 4 tbsp of lime juice throughout the cooking process
- Add 1/3 of a bunch of cilantro roughly diced
- Add 1 tbsp each ground cumin and ground coriander
- Add 1 additional tbsp of olive oil towards the end of the cooking process
Sriracha Mayonnaise:
- Mix 1/3 of a cup of mayonnaise and 1 tbsp of sriracha sauce (I probably used 2 tbsp)
Corn Salsa:
- Grill 2 ears of corn and cut from the cob
- Take 1 cup of hot salsa (yes I used a bottle) and add in the grilled corn and mix
Assemble the Fish Taco:
- Use a small corn tortilla, then take a few pieces of the Tilapia, add the corn salsa, then the sriracha mayo, a slice of red and green pepper and finish by adding as much of the cilantro rice as you wish – enjoy Â
