As you have heard in prior posts, I am trying to add more and more healthful items into my diet. I want to do it for the right reasons but I do not want to sacrifice taste or the foods I like to eat. This sandwich was made from gluten free bread (hyperlink to that post provided here) and I tried Tempeh Bacon (faux bacon). The bread was a fine substitute and when grilled, I barely noticed any difference in taste. The faux bacon was not my favorite.
Tempeh bacon and Grilled Cheese Sandwich:
- 5 pieces of Tempeh bacon
- 2 oz each shredded mozzarella and colby jack cheese
- 1 tbsp butter
Warm your grill to 350 degrees and melt the butter on the surface. Put the ingredients together on the bread with the cheese on each side and the Tempeh bacon in the middle. Place on the grill and when flipped, cover with a pot top to get a good melt on the cheese. Enjoy!
