Southern Potato Salad

I have to give a big shout out to Kaci.  Kaci is my “cajun” go to friend for Cajun recipes.  And this one is from her mom.  So, either I have earned her trust or she wants to get a big mention on this blog?  You decide?

I asked her what she serves with her gumbo?  She said this potato salad recipe.  I am like no way.  She is trying to make a Yankee look foolish.  She assured me that she was telling me the truth.  I guess this proves I am a true Yankee.  This recipe includes Mt. Olive’s Gherken sweet pickles.  When it is combined with the gumbo, you get an interesting contrast of the hot and cold and the spicy and sweet.

Recipe
Southern Potato Salad:
Ingredients:

  • 2 lbs of red potatoes
  • 6 hard boiled eggs
  • 5 sweet pickles
  • 4 tbsp mayonnaise
  • 4 tbsp spicy mustard
  • salt & pepper to taste
Directions:
Boil potatoes and eggs.  Potatoes are done when you stick with a fork and it goes in easily.  Peel the eggs and separate the whites from the yolks.  Chop pickles and mash the whites and combine.  Drain the potatoes, mash and add to the pickles and egg whites.  In a separate bowl, combine mashed yolks, pickle juice, mayo, mustard, salt and pepper.  Mix the dry and wet ingredients and taste for seasoning.
