What is your favorite fish? I could have salmon almost every day of the week.
Jump to RecipeSalmon is so flexible. I believe the most versatile of all fish. It is a sturdy fish, and when cooked correctly, it can be so flaky, so tender. Salmon can be cooked on an outdoor grill, in a skillet, baked in the oven, steamed and more. All of these preparations are so delicious and some examples of my salmon recipes include:

This creation was a complete dinner using two of Alison Roman’s recipes. My last post showed her HEALTHY CREAMY BEANS (YOUTUBE VIDEO) and this salmon I saw on her Youtube channel. She made them each of these separately. I decided to combine them. I am trying to eat healthier and topping salmon over beans instead of a starch is a good start. Now, cooking the lemons and onions in butter is not so healthy nor is topping the salmon with some of the butter. Even though this was delicious, we will not be seeing this in my healthy recipe rotation going forward.
My Simple Butter Roasted Salmon comes together so easily. It begins with melting butter and then dropping lemon slices and red onions in the butter. Let it cook until the onions soften a bit and the lemons release their juice in the butter and they pick up some of the butter. The salmon is placed on a baking tray and then topped with butter, lemon and red onions. The salmon is baked in the oven. This baking process really produces a tender piece of fish.

Simple Butter Roasted Salmon
Creating a complete dish of Alison Roman recipes taking her butter salmon and seriving it on top of her creamy beans.
Ingredients
- 2 Whole Salmon filets
- 1/2 Whole Lemon sliced
- 1/4 Whole Red onion sliced
- 1 Stick Butter
- 2 Tsp Safflower oil
- 2 Tsp Salt
- 2 Tsp Ground black pepper
- 1 Tbsp Old Bay seasoning
Instructions

Begin by melting the butter with the oil on medium high heat in a skillet. Once the butter is melted add the lemons and red onions. Cook until a nice char is achieved on the lemon and red onion.
Now spice the salmon and place on a baking tray. Top the spiced salmon with the red onions and lemon and drizzle some of the butter on top. Place in a 325 degree oven and bake for 10 – 12 minutes.
Let rest for 1 – 2 minutes. Serve over my creamy beans and kale.
