Salad with Grilled Corn

I will say one thing I have learned to appreciate with my cooking is the importance of each item in the meal.  This learning had given me a new appreciation for salads.  I used to like to make my own salad dressing and that was good enough.  Now I really try to add lots of flavor and color to the salad.  With summer here, adding grilled corn is a really nice touch.

Recipe
Salad with Grilled Corn:

  1. Soak the corn with husks in a bowl of water for at least an hour before you plan to grill them
  2. Turn your grill on medium low and place corn including husks directly on the grates
  3. Cook for 20 – 25 minutes and you will have delicious corn with a little bit of char
  4. For the salad, chop romaine finely, add diced cucumbers, squash, zucchini, quartered tomatoes and the corn
