For the big game, you have to make sure you take care of all the different food tastes that your guests have. Â I prepared a lot of comfort food. Â Said differently, not necessarily healthy (but tasty). Â So I decided to add some fish as an alternative. Â Given that the superbowl is all about finger food. Â I want to make it into a sandwich. Â What you need is good bread and a good sauce to go along with the fish.

You can throw this recipe together in a matter of minutes. Â I used a jar of roasted red peppers and fire roasted tomatoes.

IngredientsÂ

4 whole roasted red bell peppers

1/2 can of fire roasted tomatoes

3 cloves garlic

1/2 yellow onion

1/4 cup red wine vinegar

1 tablespoon sugar

1 teaspoon salt

Directions:
- Roast the garlic and onion under a broiler high for 3 minutes for the garlic and 8 minutes for the onion. Â Be sure to turn the vegetables to roast on all sides. Remove from heat.
- In a food processor combine all ingredients and pulse until fully mixed. Â I ended up adding just a little bit of mayonnaise (1 – 2 tbsp) to thicken the sauce. Â Enjoy.
