Potato Skins

Do you want an appetizer, or for that matter, a dinner that is easy to make but not short on flavor?  Try these Potato Skins.  There are recipes that are not difficult but each of the steps are very important to making the dish a success.  In this recipe, the potatoes are baked with olive oil and Kosher salt on the skin.  This really creates the first level of flavor.  After the potatoes are cooked, and the potato is removed, more salt and oil is added to the remaining skin and potato.  The potato skins  are placed back in the oven.  This ensures that the potato will have the perfect crispness.

Potato Skins have to have crispness to hold up to whatever you add to it.  The most basic potato skin has cheese and slices of green onion.  If you want the full calories version, you can add sour cream and bacon.  Personally, I do not think all those calories are necessary.  If you cook the potato just right, they just need a few ingredients to compliment the natural flavors of the potato.  The ingredients for these potatoes include salt, oil, cheese and green onions.  That’s it.
