My potato dish is creamy, cheesy and pretty grown up. The dish has a few steps to it but it is so worth it. One step is sautéing green onions and garlic. A second step is the liquid which is eggs and spices. Another step is peeling the potatoes and cooking them until al dente. Next, the potatoes are mashed into the liquid. Finally, the rest of the ingredients are added including plenty of cheese.

Potato Cheese Bake

Ingredients

  • 12 Whole Baking Potatoes
  • 1 Bunch Green onions diced
  • 4 Cloves Garlic sliced
  • 2 Whole Eggs beaten
  • 1 Cup Coconut milk
  • 1 Tbsp Turmeric
  • 2 Tsp Ground Black Pepper
  • 2 Tsp Kosher salt
  • 2 Tbsp Olive oil divided
  • 3/4 Cup Sharp Cheddar Cheese
  • 1/4 Cup Shredded Parmesan cheese
  • 1 Tbsp Lemon juice

Instructions

  1. Begin by cooking the potatoes in boiling water. Cook until just done. Let cool enough to be able to peel off the skins.

    Next, heat 1 tbsp of the oil in a skillet. Add the green onions and garlic and sauté for 3 minutes. Set aside. Now, combine the eggs, coconut milk, lemon juice, spices and then the most of the cheeses. Mix well. Add the potatoes to the liquid and mash with a masher. Once combined, fold in the green onions and garlic.

    Place into the same skillet used for the green onions and garlic and add the remaining oil. Heat for 2 minutes until simmering. Pour in the potato mixture and top with the remaining cheese. Place in a 375 degree oven and bake for 35 – 45 minutes. You want to get a good crust on the bottom and the edges of the potatoes.

    Serve and enjoy!
