This recipe was totally taken from watching an episode of Brunch at Bobby’s. As I have said before, I love to watch cooking shows. When I see something I like, I want to recreate it. I do not know what the brain function is but my ability to recall the show and the recipe and the execution seem generally easy for me. I saw Bobby do this and so wanted to try it. I was having my wife and a friend over following a swim meet and wanted to serve something nice for brunch. This idea seemed brunch worthy. Take a poached egg and make it elegant by turning into a Poached egg sandwich.
- 3 eggs
- 1/4 cup of goat cheese
- 2 – 4 tbsp olive oil
- 4 thin slices of beefsteak tomatoes
- 1/2 of a baguette
- 2 tbsp olive oil
- 1/4 cup of goat cheese, room temperature
- 2 – 3 tbsp olive oil
Poach eggs in a pot with boiling water and vinegar.
When cooked, removed and place the eggs in an ice bath.
Meanwhile. heat a skillet on medium high. Add the oil and get good and hot. Slice the bread in 1/2 and place the bread in the pan inside side down. Top with a weight and grill for 2 – 3 minutes, until nicely browned.
In a bowl, take the goat cheese and mix the olive oil in to the cheese. Spread on the toasted bread.
Top with the tomatoes.
Top with the poached eggs.
Serve and enjoy!
