Is there anything more comforting than a GRILLED CHEESE SANDWICH? Grilled cheese just says childhood.
Before I describe this Pimento Grilled Cheese sandwich, I need to tell you about the lunch I just finished because, it too, was a grilled cheese sandwich – a Smoked Short Rib Double Cheese Grilled Cheese Sandwich. It was delicious. To me this demonstrates how versatile, or creative, one can get with the all American grilled cheese.
The base of this dish is the pimento cheese. So I researched the origin of PIMENTO CHEESE and found something quite surprising. We all think of pimento cheese as a Southern staple. Don’t hate me for this but my research showed that the cheese was developed in New York. New York farmers started making an unripened cheese – the precursor to cream cheese. They mixed it with a new Spanish import – pimentos or red peppers. The rest is history.
My pimento sandwich is so easy to make once you have made your pimento cheese. I use a second cheese to make the sandwich extra melty. I also started a new trick to make the crispiest grilled cheese ever. I begin by grilling one side of the bread with olive oil in my skillet. I then remove the bread and put the sandwich together before grilling. This is a trick you will want to do every time you make a grilled cheese.

The Southern, well so we all thought, classic cheese recipe that is delicious made with 11 ingredients but is so easy to make.
Ingredients
Pimento Cheese
- 12 Ounces Cheddar cheese 7/8 shredded, 1/8 in slices
- 12 Ounces Pepper jack Cheese shredded
- 4 Ounces Shredded Parmesan
- 8 Ounces Cream Cheese softened
- 1 Small Jar Pimentos
- 4 Ounces Mayonnaise
- 2 Tsp Cajun seasoning
- 1 Tsp Salt
- 2 Tsp Granulated Onions
- 2 Tsp Spanish Paprika
- 1 Tsp Hot Sauce

Pimento Cheese

Combine all the ingredients food processor and mix well. Serve with the bread bowls or gluten free crackers.
