We were having fish tacos and I utilized a braising cooking method instead of grilling. Â The tilapia was super moist and flavorful.
Recipe
Mexican Braised Tilapia:
- Create a marinate by combining 1/2 cup of canola oil, 1/4 cup of tequilla, 4 tbsp of lime juice and add 1 tbsp each oregano and basil, salt and pepper to taste, mix well
- Add 5 tilapia fillets (a little more than 1 lb), a few fresh sprigs of cilantro and 1/4 each of a sliced red onion and green and red bell peppers and refridgerate for 2 hours
- Turn heat to high under your skillet and pour in the marinate and vegetables reserving the tilapia fillets until the liquid is hot
- Turn heat down to medium and place fillets in the heated marinate – cook for 6 or 7 minutes, turning a couple of times.
