Kofta Pita Pockets

Food trends on Instagram Reels have a way of sparking culinary creativity like no other platform. Recently, I stumbled upon an idea that I thought was so cool I had to try it. Today, I am excited to share with you the delicious, super cool idea of Kofta Pita Pockets. This is a creative twist on a classic favorite that I developed in my last post – EASY BEEF & LAMB KABOBS.

What are Kofta Pita Pockets?

Kofta, a Middle Eastern dish, typically consists of seasoned ground meat (usually beef, lamb, or a combination) formed into savory logs or patties. In this inspired recipe, I take the flavorful kofta and transforming it into a delightful pita pocket filled with the beef & lamb mixture.

The idea is simple. The meat is packed inside pitas. Then, it is grilled on an open fire – I used my GREEN EGG. I used the green egg for the high heat that it generates, not the smoking quality. First, the pockets are grilled meat side down – each exposed side. Next, the pita pockets are turned on to the grill to get crisp and get some grill marks. The pockets are completed by cooking them with indirect heat to ensure they cooked all the way through. Thank you INSTAGRAM for this creative idea.

Kofta Pita Pockets

My recipe is pulled from an idea I saw on Instagram reels. I have come up with these super fun Kofta Pita Pockets to share with you.

Ingredients

  • 2 Lbs Ground Beef
  • 2 Lbs Ground Lamb
  • 1 Whole Yellow onion minced
  • 1 Tbsp Salt
  • 1 Tbsp Chili ufra pepper
  • 2 Tsp Turmeric
  • 1 Tbsp Sumac
  • 2 Pinches Saffron soaked in warm water
  • 2 – 4 Whole Pitas cut in 1/4s

Instructions

  1. Begin by combining all the ingredients in a bowl. Mix really well to combine.

    Take the meat, and fill the pita pocket with as much meat as you can fit in. Place it on to a very hot grill. I used my green egg. First, cook the exposed meat side of each pita. Once well browned, turn the pitas flat to get grill marks. Finish by moving the the stuffed pita to the side and cook with indirect heat until done.

    Serve and enjoy!
