Kale Chips

I saw this done somewhere and said I need to try this.  It is so easy.  I got on line to get a recipe but it is simply kale, olive oil, salt & pepper.  It is really good to munch on and healthy since it has only olive oil and is done in the oven.  I guess now I do not have much of an excuse for the potato chips while I watch TV – well maybe once in a while.

Recipe
Kale Chips:

  1. Wash and shred off the leaves of 2 bunches of kale
  2. Take the rinsed, shredded kale in a bowl and mix in 2 – 3 tbsp olive oil, 1 tsp each of salt and pepper and mix well
  3. Place on a cooking tray and put in a 350 degree oven for 8 – 10 minutes, remove and serve

I grow Kale and sometimes draw a blank coming up with different ways to cook it – I’ll definitely be trying this one!
