I know a grilled cheese is not a particularly difficult recipe to make and it is actually a survival food for college kids. In making this Jalapeno Mac N Cheese Sandwich, I feel like I have come a long way. I did not even hesitate to cook the jalapeno on my stovetop. I know I have never done that before. That may not seem like a major accomplishment but it made me realize how my overall experiences have made me more comfortable in the kitchen.
Fellow food bloggers will know what I am talking about. If you are stopping by my blog because you want to see how this is done, then I know how you feel. We all started out not knowing how to do a whole lot in the kitchen. When we started to get some idea of what to do in the kitchen, one rarely tried those tricks we saw chefs do on TV. I am not sure where exactly I jumped off the cliff from unknowing, timid home cook to I kind of know what I am doing but I realize I kind of have the hang of this thing we call cooking. Now, I have a lot to learn but years of trial and error have taught me much.
When one uses a pepper on a sandwich, you often blister the skin so you can peel it off. This can be done by putting the pepper on a baking tray, drizzled with olive oil and either cooked or broiled to char the pepper. In this method, you simply turn your burner on high heat and put the jalapeno directly over the flame. Stay close and simply rotate the pepper on all sides over the flame once the bottom side is charred. When the poblano is charred on all sides, place it into a plastic bag and seal it. This step is also done in the oven method. After 10 – 15 minutes, remove the jalapeno from the bag and peel or scrape off the skin.
At this point, the difficult part of the sandwich is complete. Cut one side of the poblano so you can take out the seeds and it will lay flat. Then, the jalapeno mac N cheese sandwich is ready to be assembled by layering the cheese, the Mac N Cheese and the jalapeno.
- 2 pieces sourdough bread
- 1 tablespoon butter
- 3 slices turkey
- 3 slices smoked gouda
- 1 jalapeno
- 2 big spoons Mac N Cheese (see link for Mac N Cheese recipe)
- Butter the 2 slices of bread.
- Heat a skillet on medium heat.
- Assemble the sandwich with the turkey, followed by the cheese, jalapeno and finished with the Mac N Cheese.
- Add the sandwich to the skillet and cook 3 - 4 minutes per side.
- Take the sandwich out of the skillet. Leave any of the Mac N Cheese that fell out.
- Cook the Mac N Cheese until a char forms.
- Put the extra Mac N Cheese on the plate.
- Serve and enjoy!
