There are recipes that we assume are just easy to make. Cooking onions for a long time, can’t be hard.
I can remember when I first started trying to cook caramelized onions, that I always failed. They would take forever to cook or they would stick together. I even burned them. OH. It also took my so long to get them cooked. The recipe said 20 – 30 minutes. It was taking me at least 45 minutes, and many times, an hour. What am I doing wrong?
That was, is, a real question. So this a post for all you out there that have suffered a similar fate. Let’s stand up to onions and take this challenge head on. Seriously though, the two tricks to successfully caramelizing onions are to use a lot of onions and pretty high heat.
To begin the How to Caramelize Onions starts with adding a bunch of fat to a skillet. Go ahead and use butter or if you do not want to use too much butter, balance the butter with oil. When the butter is fully melted, add in at least 3 full onions. The real key is you have to stay around the skillet. While the onions cook, you want them to stick to the pan a little. That helps them brown. The onions will also produce a lot of liquid. Once the liquid all cooks off, you add water to the onions. This will loosen the onions from the bottom of the skillet. Repeat while the liquid burns off again. Keep doing this until the onions get to the brown color you desire.

- 1 Stick Butter
- 3 Whole Yellow Onions sliced
- 1 Tbsp Salt
Instructions

Begin by melting the butter in a cast iron skillet on medium heat. Once melted, add the sliced onions and salt. Stirring frequently but let the liquid evaporate so the onions will stick to the skillet. When they begin sticking, stir more and add 1/4 cup of water to loosen the onions. Repeat this step of cooking out the liquid and letting the onions stick to the skillet. Each time the onions stick to the skillet, add another 1/4 cup of water and repeat until you get the level of browning you desire.
