Starting with simple but tasty ingredients can make even the ordinary sandwich a thing of beauty. This Grilled Zucchini Hummus Gluten Free Sandwich started with my last ARTISAN BREAD creation. The texture of gluten free bread really transforms when it is toasted. So the base, literally the base, of this sandwich is awesome. Then, grilling the zucchini outdoors brings out such good flavor in the zucchini. I think we all often hear how grilling vegetables releases there natural sugars. I guess that is what happens here. I also really like the grill marks the zucchini picked up.
The sandwich was finished off with red pepper hummus which brought a wonderful creaminess to the sandwich. The red peppers also brought a nice spice as well. I cannot remember exactly the date I made this sandwich on but I am going to give credit to my youngest son, Nate for this idea. We recently had the blessing to go on a family trip to GLACIER NATIONAL PARK together to do some hiking and outdoor activities. On hike days, we prepared sandwiches to eat on the trail. Nate encouraged us to buy hummus to add to the sandwiches. I tried it and now I am hooked. It is so much healthier to use hummus than mayonnaise. It also adds such a unique flavor to the sandwich. Thank you Nate.
So Nate I am pretty sure that I made this sandwich upon returning home. Using the hummus with the vegetables was the perfect complement to the Grilled Zucchini Hummus Gluten Free Sandwich. I added thinly sliced radishes to the sandwich as well. The radishes add great color and a super crunch. The toasty bread also added the perfect bite to this sandwich.

Grilled Zucchini Hummus Gluten Free Sandwich
- 2 Strips Zucchini
- 1 Tsp Olive Oil
- 1/8 Cup Red Pepper Hummus
- 1 Whole Radish thinly sliced
- 1 Tsp Salt
- 1 Tsp Black Pepper
- 2 Slices Gluten Free Artisan Oat Bread
Lightly salt and pepper the zucchini and drizzle with olive oil. Place on an outdoor grill on medium high and grill 1 minute on each side.
Toast the Gluten Free Oat Bread. Begin layering the sandwich with the red pepper hummus. Next add the sliced radishes. Finish by topping with the grilled zucchini.
Serve and enjoy!
