Sunday is sandwich day. It is grilled sandwich day. My wife asked me today if I miss cooking my sandwiches for the kids who are off at college? Yes and no. For sure, it would be more fun to cook for them and to have them with us. But no, because I do not have to stop enjoying my Sunday lunches. This morning, and normally, I am already cooking 2 or 3 different dishes as lunch approaches. Today was no different. So this Grilled Turkey Havarti & Avocado Sandwich was prepared for my lunch was started once I had my dinner prepped and in the fridge.
Ingredients:
- 3 slices of thick turkey
- 3 slices of Havarti cheese
- 1/2 of an Avocado sliced
- 1 – 2 tbsp canola oil
- 1 tbsp butter
Directions:
Assemble the sandwich starting with the turkey and then top with the cheese. Heat the oil on medium heat. Once warm, add the butter. When melted, place the sandwich with each piece of bread in the pan (meaning, do not top it yet). After the first couple of minutes of the grilling, cover the sandwich with a pot top enabling the cheese to melt more.
It will take 6 minutes or so of total grilling time. Take out of the pan and add the avocado before topping. Enjoy!
