It has been quite a while since I posted a sandwich recipe. By reviewing my pictures, I realize that this has been sometime since I actually made this sandwich. The ingredients are simple yet the flavors are strong. The flavor is generated from the grilling. This Grilled Eggplant and Smoked Gouda Sandwich is a perfect sandwich to satisfy the thirst for a good sandwich but the ingredients are light enough to leave you feeling good when you are done.
I love a sandwich. I used to make sandwiches every Sunday. The Sunday sandwiches I make are traditionally made using the leftovers from the previous night’s dinner. My eggplant and smoked gouda sandwich is similar. The eggplant was the an extra that I did not use for last night’s dinner. Smoked gouda was the cheese I had in the fridge. We almost always have some smoked gouda around. It is my favorite cheese to work with including my kid favorite Macaroni N Cheese recipe.
It is January 2nd and the following day since I started writing this post. I did not finish the post yesterday because we had the whole family home. My oldest who lives in downtown Chicago cam out to have dinner with us and his grandparents. He slept over. So when the grandparents went home, we played a family game of Dictionary Dabble. If you want a good laugh, play this game with your family and make sure my wife is playing. You will end up crying because you are laughing so hard. PRICELESS moments for my wife and me when we get all the kids under one roof again!

Grilled Eggplant and Smoked Gouda Sandwich
Ingredients
- 2 Slices Sourdough Bread
- 3 Slices Eggplant grilled
- 4 Slices Smoked Gouda
- 1 Slice Red Onion
- 1 Tsp Olive Oil
Pickling
- 1/4 Cup White Wine Vinegar
- 2 Tsp Sugar
- 1 Tsp Salt
Instructions

Begin by combining the pickling ingredients and then the red onions. Pickle for 10 - 30 minutes.
Next, brush the sliced eggplant with the olive oil. Place on the grill on medium heat and cook 3 - 4 minutes per side.
Assemble the sandwich and place on the outdoor grill. Cook for 2 minutes per side.
Cut in half. Serve and enjoy!
