It is hard for me to just make a simple meal most times. Sometimes simple is good as in this Grilled Chicken & Cheese Sandwich. I realize as I type this title, what I consider simple has really evolved. Long before I started my cooking journey, I like most husbands, manned the grill. If we were grilling burgers or chicken, it was grab the meat and throw it on the grill.
Now, I cannot just take the chicken or burgers and throw it on the grill. I have to doctor it up in some fashion. In the case of this grilled chicken, just go to your spice cabinet and grab your favorite all-purpose spice or come up with your own mix. So my go to for so many recipes is to grab some Mexican spices. I love to use GOYA’s adobo seasoning. It is truly all-purpose and is to Mexican cooking what Lawry’s seasoned salt is to American cooking. After grilling the chicken, I topped it with a thick slice of spicy chipotle cheese.
Cheese goes so well with most proteins and can be used in many ways as you can see from this DOUBLE CHEESE STUFFED SMOKED MEATLOAF. The spicy chipotle cheese is the perfect combination of creaminess with just enough of a kick to amp up this dish. Add the simple Mexican spices to the chicken and you have created a great flavor combination. The point I really want to highlight is that adding some basic spices to the meat prior to grilling, truly adds a depth of flavor to your protein. The spices get cooked or seared into the meat. This sandwich is finished off with a generous amount of cheese, lettuce, a slice of a beefsteak tomato and BBQ sauce served on a gluten free bun.

Grilled Chicken & Cheese Sandwich
Ingredients
- 4 Whole Chicken Breasts
- 4 Whole Gluten Free Buns
- 4 Pieces Lettuce
- 4 Slices Beefsteak Tomato
- 3 Tbsp Adobo Seasoning
- 2 Tsp Black Pepper
- 1 Tbsp Smoked Paprika
- 8 Slices Chipotle Cheese
- 1/4 Cup Gluten Free BBQ Sauce divided

Begin by spicing the chicken with the spices. Heat your outside grill on medium high heat. Cook the chicken breasts for 12 - 15 minutes. At about 10 minutes of cooking, brush on the BBQ sauce on both sides of the breast and cook for 2 minutes. Add a couple of slices of the chipotle cheese and get a good melt. Remove from grill and let rest for a couple of minutes.
Assemble the sandwich by placing the lettuce on the bottom bun; then the beefsteak tomato and next the chicken breast. Add some more BBQ sauce and top with the bun.
Serve and enjoy!
