For those that have been stopping by the blog this week, you have seen a number of the Greek feast posts.  This Greek Orzo Pasta Salad is another in the series from our dinner party.  This is a great recipe to do a day ahead and make less work for you the day of your party.  Orzo is such a good base.  It takes on the flavor of whatever you cook and I love its texture.  This Greek Orzo Pasta Salad is a great side for a Greek dinner.  Simply, mix in spinach, red onions and feta and you have the makings of a great Greek Orzo Pasta Salad.
Greek Orzo Pasta Salad
Ingredients:
1 cup uncooked orzo pasta
1/4 cup Greek olive oil, divided
1 clove garlic, minced
1/2 red onion, diced (not too small)
1 tsp. dried oregano
1/2 tsp. dried thyme
2 Tbs. lemon juice (about half a lemon)
2 cups baby spinach, packed
1/4 cup feta cheese + more for garnish
directions:
Cook the orzo according to package directions.
While the orzo cooks, heat one tablespoon Greek olive oil in a large skillet on medium heat. Add the red onions and cook for 4 – 5 minutes until softened.  Add in the garlic and a pinch of salt, thyme and the oregano, stir well.
Cook for about 1 minute more.  Add in the spinach
and cook until it wilts. Â Next, add in about 1/2 the feta and let it melt a little.
Mix everything together real well. Season with salt and pepper and add the cooked orzo and add in the rest of the feta. Â Â Cook for 1 minute until blended.
Serve with the final feta for garnish.
