Here’s a change up. I am going all vegetarian for this installment. Certainly as I have matured and increased my cooking, I have come to appreciate vegetables more and more. I read about vegetarian, raw and other such diets. I ponder whether I could do it or not. This installment certainly highlights some wonderful blogger recipes and the variety one can find if they choose a vegetarian route.
For an appetizer, I present Roasted Cauliflower from Wholelifestylenutrition (a site dedicated to health and healthy eating).
To go along side of the cauliflower, how about kicking it up with some Roasted Jalapeno Soup from Chocolate Moosey.
For the main course, I offer up a Kenji’s Kick butt Spinach Mushroom Lasagna from Karma free Cooking.
As I tend to do often, mix cultures within one dish, here I suggest a Japanese Cucumber Salad to go with the lasagna from Appetite From China. Why not?
I finish our meal with something a little fun and for me, the anticipation of going home (where my wife grew up) and going to the orchard for some apple cider donuts. Baked Apple Cider Donuts from Eat. Drink. Love.
