The whole family is starting to eat more fish. Each of the kids, as they get older, is learning to balance their meat intake. I point this out because I think it is such a good change to develop early. There is so much more information on eating healthy and the visibility of better nutrition is everywhere. Now, we just need to get them to eat a greater variety in the fish they will eat. This night we used salmon for our tacos because that is the only fish my daughter likes.

Ingredients:
- 2 salmon fillets
- 2 Mangoes, diced
- 1 jalapeno, diced
- 1 avocado, diced
- 1 tbsp oregano
- 1 tbsp lime juice
- 1/4 red onion, diced
- 1 slice each of red and Napa cabbage
- 2 tbsp Adobo season salt
- 1 tbsp chili powder
- 6 – 8 Tortillas
Directions:
Rub the spices on the non-skin side of the salmon. Turn your grill on medium heat. Cook the salmon for 3 minutes on the spiced side and then turn over and cook for another 6 – 8 minutes. Meanwhile, in a bowl, mix together all of the salsa ingredients.
Finish by adding the lime juice.
For serving, take a tortilla, as much fish as you like and top with the salsa and cabbage. Enjoy!
