Before I explain my Egg Muffin creation consider that eggs might be the most VERSATILE ingredient of them all. We use them and eat them at every meal. There are so many different ways to serve them for breakfast. I love to make an egg salad for lunch. Todays hottest chefs all seem to top them on their entrees especially in burgers. Eggs are the base of breads and the key to desserts.
Most people agree, though, that breakfast is a meal that is enjoyed at any meal of the day. When the kids were little, our go to dinner when we had nothing prepared for them was breakfast for dinner – some sort of omelet. I really like eggs in all its forms. What is your favorite way to serve eggs? I would say my favorite is probably the poached egg which is the hardest to make. But I like them prepared in so many ways. I love frittatas, omelets and I really love fried eggs over easy served on top of a hashbrown skillet.
This egg muffin creation was simple created to take advantage of my leftovers from my Macaroni N Cheese Bar. In this dish, I add roasted poblanos, roasted broccoli and smoked sausage. That sure sounds like breakfast ingredients to me. Add a little cheese and all is complete. Instead of making an omelet, I simply whipped up the eggs, warmed the sausage, and then, added all the ingredients into a muffin tin. Bake until set and you have a delicious breakfast. You can save the extra muffins and pull them out as a snack or bring them to work for lunch. How FLEXIBLE.

- 9 eggs
- 1 smoked sausage
- 1 roasted poblano
- 1 cup roasted broccoli florets
- 2 tablespoons adobo seasoning
- 1 tablespoon black pepper
- 1 cup cheddar cheese
- 1/4 cup coconut milk
- Beat the eggs.
- Add the spices and combine well.
- Reheat the sausage. (The sausage, broccoli and poblano were cooked and roasted the night before).
- Pour the egg mixture in the muffin tins evenly.
- Spread the sausage, broccoli, poblano and cheddar cheese evenly in each of the filled tins.
- Put in a 350 degree oven and cook until set.
- Serve and enjoy!
