Creamy Cauliflower Broccoli Rice

For those people that don’t think the like cauliflower, this is a must try.  I will bet even your kids will eat this one.  I saw this recipe from Pinch of Yum but decided to add a little broccoli to her recipe to add color more than anything.  I think the challenge for most people with vegetables, or guys who only eat vegetables because they are good for you, is that they are not dressed up.  This does not mean that they have to loose their healthy attributes.  We just need to add a couple of ingredients and maybe a little bit of cheese.

Sorry, I got interrupted with this post by a Chicago Blackhawks power play goal.  Does anyone know what the best start in NHL history is?  Back to the post.  By pureeing the cauliflower, you create a really cool consistency.  I think I am going to try this puree on pasta soon.

Recipe
Creamy Cauliflower Broccoli Rice:

Ingredients
1 head cauliflower
1/2 head broccoli
2 cups water
1/4 cup heavy cream
1½ cups brown rice
1 teaspoon salt
2 tablespoons butter
2 tbsp minced garlic
½ cup Mozzarella cheese

Directions
Cook the rice according to package directions. Set aside.  Bring the water to a boil in a large pot. Add the cauliflower, broccoli and boil for about 10 minutes, until tender. Transfer cauliflower pieces to the food processor.  Puree and add the broccoli in and continue to puree.  Add a little of the water from the cooking process and the heavy Cream to get a smooth, creamy consistency. Season with salt.

In a large nonstick skillet, melt the butter and add the garlic, sauteing over low heat until the garlic is very fragrant, about 3-5 minutes. Add the creamy rice mixture and stir until butter and garlic is incorporated. Pour over the cooked rice and stir to combine.  Add cheese on top or stir it throughout the rice to get it melted. Season with additional salt and pepper to taste.
